Courgette Pesto Pasta

Ingredients:
- 3 level scoops of Ensure NutriVigor Plant-Based1
- 200g spinach, washed and dried
- 1 bunch of basil
- 100ml extra virgin olive oil for pesto sauce
- Zest from 1 lemon
- Juice from 2 lemons
- 70g of pine nuts
- 2 garlic cloves
- 25g parmesan style vegan cheese, grated
- 1 tbsp extra virgin olive oil to cook courgettes
- 2 sliced courgettes
- 300g dried pasta
- Salt and pepper to taste
Makes: 4 servings
Method:
- Cook pasta al dente as per instructions on the packet.
- Lightly toast pine nuts in a pan on a low heat for 2-3 minutes.
- In a food processor add spinach, Ensure NutriVigor Plant-Based1, basil, pine nuts, lemon zest and juice, extra virgin olive oil and parmesan style vegan cheese and blitz until smooth. Set aside.
- Heat oil in a griddle frying pan on a medium heat. Add courgettes and cook for 2 minutes on each side.
- Return the pasta to a pot along with pesto and courgettes and gently heat through.
- Season to taste.
- Serve with a green salad (optional).
