Courgette Pesto Pasta

  • 3 level scoops of Ensure NutriVigor Plant-Based1
  • 200g spinach, washed and dried
  • 1 bunch of basil
  • 100ml extra virgin olive oil for pesto sauce
  • Zest from 1 lemon
  • Juice from 2 lemons
  • 70g of pine nuts
  • 2 garlic cloves
  • 25g parmesan style vegan cheese, grated
  • 1 tbsp extra virgin olive oil to cook courgettes
  • 2 sliced courgettes
  • 300g dried pasta
  • Salt and pepper to taste


Makes: 4 servings



  1. Cook pasta al dente as per instructions on the packet.
  2. Lightly toast pine nuts in a pan on a low heat for 2-3 minutes.
  3. In a food processor add spinach, Ensure NutriVigor Plant-Based1, basil, pine nuts, lemon zest and juice, extra virgin olive oil and parmesan style vegan cheese and blitz until smooth. Set aside.
  4. Heat oil in a griddle frying pan on a medium heat. Add courgettes and cook for 2 minutes on each side.
  5. Return the pasta to a pot along with pesto and courgettes and gently heat through.
  6. Season to taste.
  7. Serve with a green salad (optional).
